This recipe comes from the Mushroom Council. It combines three of my favorites, mushrooms, shrimp and fresh spinach. Enjoy Ingredients:
8 ounces linguine |
3 tablespoons olive oil |
1 pound fresh mushrooms, sliced |
1 tablespoon garlic, minced (or to taste) |
1 pound large fresh shrimp, peeled and deveined |
1 (10 ounce) bag fresh spinach, stems removed and torn |
1/4 teaspoon crushed red pepper flakes |
1/4 cup parmesan cheese, grated |
Directions:
1. Cook pasta according to package directions, reserving 1/2 cup pasta cooking water when draining. 2. In large skillet, heat oil. 3. Add mushrooms and saute until mushrooms are softened and most of the liquid is evaporated, about 5 minutes. 4. Add garlic and shrimp and saute until shrimp turn pink, stirring. 5. Stir in spinach and reserved pasta cooking water. Cook until spinach is wilted, about 1 minute. 6. Toss shrimp mixture with cooked linguine, red pepper flakes and Parmesan cheese. 7. Season to taste with salt if desired. |
