Ingredients:
8 ounces linguine, uncooked |
2 tablespoons olive oil |
1 lb fresh mushrooms, white,sliced |
1 tablespoon garlic, chopped |
1 lb large shrimp, frozen peeled and deveined,thawed |
10 ounces fresh spinach, trimmed and torn |
1/4 cup parmesan cheese, grated |
1/4 teaspoon crushed red pepper flakes |
Directions:
1. Cook linguine according to package directions. 2. Drain, reserving 1/2 cup pasta water; set aside. 3. Meanwhile, heat olive oil in large skillet. 4. Add mushrooms and garlic; cook and stir about 5 minutes or until tender and mushroom liquid is almost evaporated. 5. Add shrimp; cover and cook about 5 minutes or until shrimp is almost cooked through. 6. Stir in spinach and reserved 1/2 cup pasta water. 7. Cover and cook about 1 minute or until spinach is wilted. 8. Place pasta in serving bowl; stir in mushroom and shrimp mixtures, Parmesan cheese and red pepper. 9. Toss to combine. 10. Season with salt, if desired. |
