Mushroom Omelet

A quick, tasty meal for two.
Ingredients:
1 ounce butter
1 tablespoon olive oil
3 1/2 ounces chestnut mushrooms, sliced
2 ounces baby spinach
4 eggs, lightly beaten
2 ounces sharp cheddar cheese, grated
salt and pepper
Directions:
1. Preheat the broiler. Heat the butter and oil in a nonstick pan. Fry the mushrooms for 4-5 minutes. Add the spinach and cook for 1 minute. Set aside.
2. Add the eggs to the pan, season. Cook for 4 to 5 minutes until the underside is golden and the egg is almost set, then scatter the mushrooms, spinach and cheese over.
3. Cook under the broiler until the cheese has melted. Cut in half and serve with crispy fried potatoes.
