I got this recipe out of a cookbook that a friend gave to me. I love to make this. It is an easy recipe that I have made over and over again. It is so delicious also. Make sure that you watch them carefully when you place t hem in the oven they can burn easily. And also make sure that you use Water Biscuit Crackers , the hold the mushroom mixture very well. Ingredients:
2 teaspoons butter |
2 tablespoons finely chopped shallots |
5 1/2 ounces mushrooms, chopped |
1/2 teaspoon crushed garlic |
salt and pepper |
2 teaspoons lemon juice |
2 teaspoons flour |
16 water cracker biscuits |
4 sandwich pepper jack cheese slices |
paprika |
Directions:
1. 1. Melt butter in a small pan, add shallots, mushrooms and garlic and saute'. 2. a little. Add salt, pepper and lemon juice. Stir in flour and cook 1 minute. 3. Allow to cool. 4. 2. Place a teaspoonful on each water cracker biscuit. Cut each cheese slice 5. into four squares. Place a piece over the mushroom mixture on each 6. cracker. 7. 3. Place in hot 325 degree oven until cheese melts. Sprinkle with paprika and serve. |
