4 tablespoons butter, divided |
1/2 lb fresh mushrooms, finely chopped |
2 garlic cloves, finely chopped |
1/4 cup green onion, finely chopped |
1/3 cup chicken broth |
4 ounces cream cheese, softened |
2 tablespoons finely minced chives |
1/4 teaspoon black pepper |
fresh parsley (to garnish) |
Directions:
1. In a medium skillet over high heat, melt 2 tablespoons butter. Add mushrooms and cook 2-3 minutes. 2. Add garlic and green onions; cook 1 minute. 3. Add chicken broth; cook 5 minutes or until all of the liquid is absorbed. 4. Remove from heat and cool to room temperature. 5. In a mixing bowl with and electric mixer, beat all of the remaining ingredients together with the mushrooms. 6. Cover and refrigerate until serving time. |
