Prepare Mushroom Grits to serve with Ham and Swiss Omelets. Ingredients:
3 tablespoons grits, uncooked |
1/4 cup (1 ounce) shredded reduced-fat cheddar cheese |
butter-flavored vegetable cooking spray |
1/3 cup chopped fresh mushrooms |
1 teaspoon minced garlic |
1 tablespoon canned no-salt-added beef broth, undiluted |
1 teaspoon chopped fresh parsley |
1 teaspoon fresh lemon juice |
1/4 teaspoon hot sauce |
1/8 teaspoon salt |
Directions:
1. Cook grits in a small saucepan according to package directions, omitting salt and fat. Add cheese, stirring until cheese melts. Cover and keep warm. 2. Coat a small nonstick skillet with cooking spray; place over medium heat until hot. Add mushrooms; saute 2 minutes. Add garlic; saute 1 minute. Remove from heat. Stir in beef broth and remaining ingredients. 3. Add mushroom mixture to grits, stirring well. Serve immediately. |
