I created this recipe because I love the taste of mushrooms, and this pilaf has a very intense mushroom flavor. My husband and I love it served with grilled swordfish. In the time it takes him to grill the fish, I can easily fix my side dish. -CL Reader Ingredients:
1 tablespoon olive oil |
1/2 cup minced fresh onion |
1 garlic clove, minced |
2 cups low-salt chicken broth |
1/2 teaspoon salt |
1/2 teaspoon white pepper |
1 cup uncooked basmati rice |
1/4 cup chopped chives |
1/4 cup thinly sliced green onions |
1 (8-ounce) package mushrooms, chopped |
Directions:
1. Heat oil in a medium saucepan over medium-high heat. Add onion and garlic, and sauté 2 minutes. Add broth, salt, and pepper. Bring to a boil; add rice. Cover, reduce heat, and simmer 35 minutes. Remove from heat; let stand 5 minutes. Stir in chives, green onions, and mushrooms. |
