Mushroom, Chestnut and Pumpkin Pilaf

Ingredients:
200 grams chestnuts
1 tbsp sesame seeds
150 grams squash, winter, butternut
1 cups wild rice, cooked
1 tbsp soy sauce
1 oz sake wine (16% alcohol)
1 1/2 cups chicken stock
6 mushrooms mushrooms, shiitake
Directions:
1. Put the rice, pumpkin, chestnuts, soy sauce and mirin in a small casserole with a lid, lay the mushrooms on the surface stalk-side down.
2. Pour the chicken stock over the rice to cover it by about 1/2 cm, bring to a simmer, cover and cook for 15 minutes or until the rice is tender.
3. Sprinkle with sesame seeds before serving.
