This bisque is very flavorful. We served this as a special at a restaurant that I managed. The recipe was always requested. I can now share it with you. Ingredients:
1 pound white button mushrooms, sliced |
3/4 pound crimini mushrooms, sliced |
2 cups chicken broth |
1/3 cup dry white wine |
2 shallots minced |
9 tbls butter |
9 tbls flour |
4 cups half & half |
1 large clove garlic minced |
1 tsp rosemary |
1/2 tsp thyme |
1/2 tsp basil |
1 tsp salt |
1 tsp pepper |
dash of hot sauce |
Directions:
1. Grind mushrooms for a smoother bisque or use them sliced for a chunky bisque; place in a large pot with the shallots, broth and wine; simmer 15 minutes. Cover and simmer another 15 minutes. Melt butter on medium heat in a saucepan; whisk in flour until well blended let cook for 2 minutes. Add half & half stir until thickened. Add to mushroom mixture. Add spices, salt and pepper. Simmer 15-20 minutes more. Add hot sauce. Enjoy |
