Mushroom & Barley Soup Gi Jane

A hearty soup with delicate flavours
Ingredients:
1 tsp butter
1 tsp oil
2 oz celery, finely chopped
2 oz onion, finely chopped
5 oz chestnut or brown mushrooms , chopped
2 oz pearl barley
3/4 pint (vegetable or chicken) stock
1/2 tsp mixed herbs
1/4 pint (semi-skimmed) milk
Directions:
1. Heat the oil & butter in a non-stick saucepan and add the onion, and celery. Cook very gently, covered, for 10 minutes.
2. Add the mushrooms and allow to 'sweat' for another 5 minutes to draw out the flavour.
3. Add barley, stock and herbs, bring to the boil and simmer, covered for 30 minutes until the barley is tender.
4. Finish with the milk and heat through. (If it looks too thick, add a little more water) Either serve as it is or blend.
