Mushroom-Barley Soup

A good, hearty soup out of Poland. Serve with some crusty bread.
Ingredients:
4 (14 1/2 ounce) cans beef broth
1/2 cup pearl barley
1/2 lb mixed mushrooms, cleaned and roughly chopped
1 large onion, diced
3 potatoes, cubed
2 large carrots, sliced
2 parsnips, sliced
2 tablespoons fresh parsley, minced
1 tablespoon fresh dill, minced
salt and pepper, to taste
Directions:
1. Mix the beef broth and mushrooms and bring to a boil. Add the barley, and boil for 10 minutes. Add the remaining ingredients, and simmer for one hour. Serve hot.
