From Ingredients:
1/2 teaspoon oil |
1 medium onion, diced |
2 cups mushrooms, fresh and sliced |
1/4 cup pearl barley |
4 cups water |
4 cups chicken broth or 4 cups vegetable broth |
black pepper, to taste |
1 pinch thyme |
1 bay leaf |
Directions:
1. Heat dutch oven or large pan over medium-high heat. 2. Add mushrooms and onions, cook until gold, about 3 minutes. 3. Add all other ingredients and bring to a boil. 4. Reduce heat to low, and simmer until the barley is tender, about 1-1/2 hours. |
