MUSHROOM APPETIZERS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Welty Estate in Azle, Texas in 1984. Ingredients:
1/2 pound small mushrooms |
1/3 cup olive oil |
3 tablespoons wine vinegar |
2 tablespoons lemon juice |
3/4 teaspoon salt |
1/2 teaspoon tabasco sauce |
1/8 teaspoon thyme |
2 cups water |
3 tablespoons finely chopped parsley |
Directions:
1. Wipe mushrooms with damp cloth then trim off bottom and cut into halves lengthwise. 2. Combine oil, vinegar, juice, salt, Tabasco, thyme and water. 3. Bring to boil and simmer 5 minutes to blend flavors. 4. Add mushrooms to boiling liquid then cook slowly for 5 minutes. 5. Sprinkle with chopped parsley then chill and drain before serving. |
