Mushroom and Wine Sauce (Vegan) |

From Linda Majzlik a Vegan taste of Italy. This sauce is suggested to be served with cooked veg, I wonder what it would taste like with pasta? I will have to try. Ingredients:
9 ounces mixed mushrooms (finely chopped) |
1 onion (small and finely chopped) |
1 garlic clove (minced) |
low-fat cooking spray |
2 tablespoons parsley (finely chopped) |
15 g plain flour |
black pepper |
50 ml white wine |
125 ml vegetable stock |
Directions:
1. Heat the low fat cooking spray and fry the onion and garlic until soft. Add the mushrooms and parsley and fry until the juices begin to run. Then add the flour and mix thoroughly. Gradually add the wine and then the stock stirring all the time. Season with black pepper and slowly bring to the boil. Continue stirring until the sauce thickens. |
