An easy no meat, low calorie stir fry. Serving size 1 cup: Calories 82; Protein 4g; Fat 1.8g (sat 0.3g, mono 0.6g, poly 0.8g) Carbs 12.4g; Fiber 3.7g; Chol 0mg; Iron 2.6mg; Sodium 104mg; Calc 55mg. Ingredients:
1 (.75 once) package dried black mushrooms |
1 cup boiling water |
2 tsp. dark sesame oil |
5 cups snow-peas, trimmed (about 1 lbs.) |
1 (8 once) can sliced bamboo shoots, drained |
1/4 tsp. sugar |
1/4 tsp. salt |
Directions:
1. Boil 1 cup of water. 2. In a bowl combine, water and mushrooms; cover and let stand for 15 min. 3. RESERVE 2 tbsp. of soaking mushroom liquid, drain the rest; discard mushroom stems, thinly slice caps; set aside. 4. Heat oil over med.-high heat, in a wok or non stick skillet. Add mushrooms and bamboo shoots; stir fry 2 min. 5. Add reserved soaking mushroom liquid, snow peas, sugar, and salt; stir fry 2 min. 6. Remove from wok and serve. |
