Mushroom And Potato Chowder |

A hearty comfort food chowder . All you need to add is a good loaf of bread. Ingredients:
1/2 cup onion -- chopped |
1/4 cup butter or margarine |
2 tablespoons flour |
1 teaspoon salt |
1/2 teaspoon pepper |
3 cups water |
1 pound mushrooms -- sliced |
1 cup celery -- sliced |
1 cup potatoes -- diced, peeled |
1/2 cup carrots -- chopped |
1 cup light cream |
1/4 cup parmesan cheese -- grated |
Directions:
1. In a large kettle, saute onion in butter until tender. 2. Add flour, salt and pepper; stir to make a smooth paste. 3. Gradually add water, stirring constantly. 4. Bring to a boil; cook and stir for 1 minute. 5. Add the mushrooms, celery, potatoes and carrots, 6. Reduce heat; cover and simmer for 30 minutes or until vegetables are tender. 7. Add cream and parmesan cheese; heat through |
