Mushroom and Lamb Parcels |

Ingredients:
250 g mushrooms (8 oz.) |
1 apple, peeled and cored |
4 sprigs mint |
seasoning |
1 1/2 kg loin lamb, chops. boned (3 lb.) |
butter (for frying) |
1 (17 1/3 ounce) box frozen puff pastry |
egg, for glazing |
Directions:
1. Puree the mushrooms, apple, mint and seasoning in a food processor. 2. Tie the chops into neat rounds and pan fry in butter for 1 minute on each side; allow to cool. 3. Roll out pastry and cut into large squares allowing 1 square per chop, remove string and top each chop with some of the mushroom puree. 4. Wrap the chops in the pastry and refrigerate for 1 hour. 5. Glaze with beaten egg and bake at 350 degrees for 25 minutes or until cooked. |
