Mushroom and Herb Sauce for Pasta |

A simple vegetarian sauce ideal served with pasta. Ingredients:
1 tablespoon olive oil |
9 ounces mushrooms, chopped |
3 garlic cloves, chopped |
2 tablespoons parsley, chopped |
fresh ground black pepper |
2 teaspoons all-purpose flour |
5 tablespoons water |
parmesan cheese, grated |
Directions:
1. Heat the olive oil in a small saucpan, add the mushrooms and fry gently for about 5 minutes or until softened. 2. Add the garlic and the parsley, season with pepper and leave to cook for a few minutes in their own juices. 3. Gradually add the flour, stirring constantly, then enough water to make a thick, creamy sauce. 4. Served with grated parmesan if you wish. |
