This is a great dish to serve with Broiled, Roasted, or Grilled Chicken. Ingredients:
1lb. box orzo |
1 box chicken broth ( you may not need the whole box) |
3. cloves garlic |
1 tsp. butter or margarine |
1/2 c. chopped mushrooms |
1/2 c. chopped carrots |
1/4 c. chopped celery |
1/4 c. chopped sun dried tomatoes |
1 tsp. chopped fresh rosemary or 1tea dried |
1 1/2 tea. chopped green olives those used in salads with out the pits. |
1 1/2 tsp. chopped roasted bell peppers. |
1 heaping handful of grated parmesan cheese |
Directions:
1. 1. Heat oil,butter in saucepan 2. 2. remove skin from Garlic add to Oil and lightly Brown.Remove from pan and set aside to cool. 3. 3. Add Carrots, Celery, Tomatoes and Mushrooms saute until tender. 4. 4. Add Broth and bring to a boil. 5. 5. Add Orzo and allow to come back to a boil. Boil for 10 minutes or until tender and liquid has almost all evaporated. 6. 6. Chop cool Garlic and add with the rest of the remaining ingredients. 7. 7. Enjoy warm or cold. |
