Mushroom and Chicken Livers

From Fast Chicken / The Hawthorn Series
Ingredients:
400 g chicken livers
flour, to dust
1 tablespoon oil
50 g butter
1 onion, sliced
2 teaspoons thyme, fresh or 1 teaspoon dried thyme
1 cup mushroom, chopped
Directions:
1. Toss livers in a dish of flour.
2. Fry the livers in oil and butter,until cooked and brown. Set aside.
3. Add the onion and thyme to the pan and cook until soft.
4. Stir in the mushrooms, then add the livers.
5. Season with salt and pepper.
