Mushroom and Brown Rice Casserole |

Hearty main meal Ingredients:
3 slices of bread |
2 onions |
440 grams tomatoes |
2 tsp paprika |
2 tsp of dried mixed herbs |
2 cups of cooked brown rice |
125 grams mushrooms |
Directions:
1. Preheat oven to 230. Cut bread into triangles. 2. Fry onion in pan with mushrooms for 2 mins. 3. Add tomato, paprika, herbs and half tsp of sugar. Reduce over heat for 2 mins. Add rice and third cup of vegie stock. Mix well and season. Spoon into casserole dish and top with bread, spray with oil. Bake for 10 mins. Sprinkle with parsley. Serve with peas, carrots and pumpkin. |
