Mushroom And Bok Choy Noodle Soup |

Healthy, delicious, and impressive ('just like a bought one' says my boyfriend) Makes 4 biiiig serves Ingredients:
2 litres chicken stock |
1/4 cup oyster sauce |
1 small red chilli, deseeded and finely chopped |
200g swiss brown or portabello mushrooms, thickly sliced |
1 bunch bok choy (or any other asian green), cut into biggish pieces |
300g firm tofu, cut into cubes |
600g fresh udon noodles |
2 spring onions (schallots) sliced on the diagonal, to serve |
Directions:
1. Combine stock, oyster sauce and chilli in a big saucepan and bring to the boil, covered. 2. Prepare noodles as per packet instructions. 3. Add shrooms, cover and cook for 1 minute, add bok choy, cook for 1-2 minutes, till its bright green. 4. Stir in tofu. 5. Divide noodles amoung serving bowls and ladle soup over. Sprinkle spring onions on top. 6. Now eat it with chopsticks if you wanna be REALLY authentic. |
