This creamy pilaf is a particularly wonderful side dish for pork or chicken. It can be doubled easily to feed a big crowd or make lots of delicious leftovers. Ingredients:
1/4 cup butter |
1/2 cup uncooked long-grain rice |
1/4 cup uncooked orzo pasta |
1 package fresh mushrooms, sliced |
1 medium onion, diced |
2 cups chicken broth |
1/2 cup chopped almonds |
Directions:
1. Place a large skillet over medium-low heat. Melt butter, then saute rice, orzo, mushrooms and onion. 2. Stir constantly until rice is lightly browned. 3. Mix in chicken broth and almonds. Bring to a boil, then reduce heat to low, cover skillet, and allow to simmer 15 minutes. 4. Remove from heat and let stand 10 minutes before serving. |
