A vegetarian pâté with a bit of crunch. Ingredients:
1 cup slivered almonds |
1 garlic clove |
1 small onion |
1 lb mixed mushrooms (button or porcini) |
1/4 cup butter |
salt |
1/2 teaspoon thyme |
pepper |
1 tablespoon white wine (can be replaced with sherry) |
2 tablespoons olive oil |
1/2 cup parsley, finely chopped |
Directions:
1. Toast the almonds. 2. Coarsely chop garlic, onion and mushrooms in a food processor. Sauté in butter over medium-high heat with thyme, salt and pepper to taste, and wine; simmer until liquid has evaporated. 3. Grind 3/4 cup of almonds finely; add oil and process until creamy. Add mushroom mixture and process until smooth. Mix remaining almonds slivers through the mixture; put into a mould and chill. 4. Garnish with parsley before serving. |
