From the Femina magazine. Ingredients:
1/2 kg chicken, boiled and shredded |
1 cup pineapple, diced |
1 red bell pepper, sliced |
2 spring onions, sliced |
2 tablespoons olive oil |
4 tablespoons orange juice |
1 teaspoon honey |
2 mint leaves, chopped |
1/2 teaspoon salt |
1/4 teaspoon mustard powder |
1/4 teaspoon black pepper |
1/2 cup heavy cream |
5 olives |
2 oranges |
Directions:
1. Peel the oranges and remove the pith and seeds from the segments. 2. Blend all the ingredients for the dressing in a food processor or liquidiser. 3. Place all the ingredients for the salad in a bowl. 4. Add the dressing. 5. Mix well. 6. Arrange the salad on a flat dish. 7. Garnish with the olives and orange segments. 8. Serve! |
