This recipe is from the old 'Fleet Street' cafe on Pulteney Street in Adelaide, South Australia - where evey menu item was named after a media baron. Ingredients:
8 english muffins |
1 large capsicum, chopped (red or green) |
fruit chutney |
mozzarella cheese (shredded) |
Directions:
1. Split the muffins in half and toast on both sides. 2. Spread the cut side with plenty of fruit chutney. Top with capscium and mozarella cheese. 3. Grill until cheese is melted and golden. 4. Cut into halves or quarters and serve hot. |
