This is the only way I would eat spinach growing up. Because the only other way was boiling with chopped cabbage until unrecognisable as anything that has ever lived. We also occasionally vary with chunks of fetta or pine nuts or bacon or cherry tomatoes mixed through as well. We've also tried with pastry as a base, pastry as a top, or both. Have fun playing. :) Ingredients:
10 -12 spinach leaves (silverbeet) |
1 large onion |
1/2 cup dry rice, partly boiled |
1 cup tasty cheese, grated |
3 eggs |
Directions:
1. Combine all ingredients. 2. If baking with pastry grease and line tray with pastry. 3. Transfer mix to baking dish. 4. If using a pastry top, cover mix and make steam holes. 5. Bake as a pie at 200degC for approx 40-45mins. |
