Years ago, my mother was director of nurses at a local hospital. In the cafeteria, they served a dressing on occassion that was loved by everyone. My mother finally got the cooks to give her the recipe for it (she had to scale it down to family size), and it's been a family favorite ever since. It keeps for a month in the fridge; it just needs stirred before serving. This dressing is good on any salad, it's wonderful on fresh spinache salads (with crumbled bacon, chopped red onion and diced hard boiled eggs!). And nutty as it sounds, it's a terrific condiment to serve with fried chicken livers! It's so easy to make it's crazy :)
Ingredients:
1 cup oil
1 cup sugar
1/2 cup ketchup
1/2 cup vinegar
1 small onion, chopped
Directions:
1. Combine all ingredients in a blender and process (I use the liquify button), till smooth.
2. Store unused dressing in the refrigerator up to a month.
