When in need of comfort then serve this soup.It is soothing for those unwe,ll.It is also nourishing on a cold day.Serve with small home made dumplings. Ingredients:
1 small/med chicken |
1 med onion chopped |
1 cup chopped celery |
1/2 bunch chopped parsley |
5 chicken cubes |
1/2 cup rice |
1/2 cup chopped potatoe/carrotts/optional |
1 cup milk-(or )2 tablspns cream |
1 cup mashed potatoe |
2 tabs spns flour /blend with a little water to a paste. |
salt /pepper /bay leaf/pinch mixed herbs |
Directions:
1. Wash Chicken and place in Stock pan to boil.Just covered with stock or water.Add first 7 ingrediants and simmer.Stir Gently..1 hr.Skim We,ll during cooking. 2. - 3. .Check Chicken if cooked .Remove from stock and take off- the white meat. 4. Disgard any bones or skin. 5. Re -simmer stock .Add last 4 ingrediants. 6. - 7. When thick,add meat at last minute before serving. 8. If wished you can add small dumplings. 9. Thses can be placed on top soup,with lid on 1 minute, before ready to serve. Once you lift lid -SERVE. 10. EASY BUTTER DUMPLINGS. 11. - 12. Rub 1 tablespoon butter,into 1 /2 cup (SR Flour.)Salt/Pepper/Mix with water to soft dough.Drop from teaspoon, into boiling liquid,and put lid on 1 min only.Serve and Enjoy. |
