1 tsp olive oil |
145 g onion |
90 g carrot |
215 g leeks |
5 cloves garlic |
1 tsp grated ginger |
350 g (450 g raw) chicken breast |
4 cups chicken broth |
1 tsp sriracha |
2 tsp curry powder |
350 g granny smith apple |
2 tbsp lemon juice |
100 g coconut milk |
Directions:
1. Heat oil, cook chicken for 5 min until golden. Remove chicken from pot, add leeks, onions, garlic, carrot and ginger. Cook for 5 min, add chicken back. Add broth, lemon juice, and curry and simmer for 30 min. Add apples, coconut milk, Sriracha. Serve over rice |
