Mughlai cuisine comes from the kitchens of the Mughal Empire and is predominant in North India . It has a strong influence of Muslim Cooking. Ingredients:
1 k mutton |
6 green chillies and 10 tsp corriander leaves - set aside some for garnishing |
10 kashmiri chillies , 2 inch cinnamon stick , 6 cloves garlic , 2 cumin - grind to paste |
add 2 c cubed onions , 6 cardamoms, 4 cloves , 15 peppercorns , 2 tsp ginger , 2 tsp mint leaves , pinch of tumeric and grind again to make a paste |
add another 2 c cubed onions and grind for 15 secs . |
1 c curd , lightly beaten |
salt to taste |
Directions:
1. Fry the masala paste in ghee until light brown . 2. Add the curd and fry until the ghee separates . 3. Add the mutton , salt and 3/4 C water . 4. Pressure cook till done . 5. Serve hot , garnished with coriander leaves . |
