Muffins Cherry Merry With Magic Cherries |

This is an 80's recipe from the Mattel toy Cherry Merry Muffin. I had the lunchbox and was excited when I found this so I thought I'd add it for safe keeping. I tweaked it, as the original recipe was measured in grams. I intend to make these for the tea parties I have with my nieces. *COOK TIME & YIELD ARE APPROX, I have not yet made these! ** You could also add some cream cheese pieces to each muffin and/or place a vanilla wafer cookie at the bottom of each tin to make them extra special! Ingredients:
1 1/3 cups butter, soft |
1 1/3 cups vanilla sugar |
3 eggs |
4 1/2 cups flour |
1 (1/4 ounce) package dry yeast (prepared as directed) |
pitted sweet cherries (use 2 cherries in each muffin plus 1 for topping) |
1 cup all-purpose flour |
3 tablespoons brown sugar |
2 tablespoons granulated sugar |
1 teaspoon baking powder |
1 pinch salt |
6 tablespoons butter, melted |
Directions:
1. Preheat the oven to 375°. Line muffin cups with paper or foil liners or spray 2 muffin tins with cooking spray. 2. MAKE THE MUFFINS:Mix the butter, sugar and eggs until smooth. 3. Add the vanilla sugar and mix. 4. Add the flour and the yeast and mix again. 5. MAKE THE CRUMB TOPPING: In a medium bowl, combine the flour with the brown sugar, granulated sugar, baking powder and salt. Stir in the melted butter, then pinch the mixture until it forms pea-size clumps. 6. Spoon the batter into greased muffin tins filling each about two-thirds full and add cherries to each muffin tin. 7. Sprinkle the crumb topping on top of each one and bake until the muffins are golden and a toothpick inserted in the center comes out with a few moist crumbs attached. 8. Bake approx 20 minutes. 9. When the muffins are ready, top each with a cherry. |
