Yummy at 178 calories each (or 169 without the oatmeal) Ingredients:
2 cups all bran original cereal |
1 1/4 cups milk, skim |
1 1/4 cups flour, whole wheat |
2 tbsp splenda brown sugar |
1 tbsp baking powder |
1/4 tsp salt |
1 egg |
1 banana, small |
1/4 cup crisco vegetable (soybean) oil |
3/4 tsp coconut extract |
1/4 cup oatmeal |
2 tbsp flax seed |
Directions:
1. Preheat oven to 400 degrees. 2. In large bowl combine all bran, oatmeal, flax, coconut extract, and milk. Set aside about 5 minutes until cereal softens. 3. Mix dry ingredients: flour, sugar, baking powder, and salt. 4. Add to the allbran mix: egg, beaten, the oil, and the banana (mashed well). Beat well. 5. Add flour mixture to the liquid ingredients and stir until combined. 6. Portion batter into 12 paper-lined muffin tins. 7. Bake 20 minutes at 400 degrees. |
