~ Apple Muffins called...'Delicious'~ Ingredients:
1/2 teaspoon baking soda |
1 cup buttermilk |
1 cup old fashioned rolled oats |
1 apple,peeled and chopped |
1/8 cup apple brandy |
1/2 cup brown sugar |
1 farm fresh egg,beaten |
1 cup flour |
1 teaspoon salt |
1 teaspoon baking powder |
1 teaspoon cinnamon |
1/2 teaspoon nutmeg |
1/2 cup butter,melted and cooled |
1 cup golden raisins |
1/2 cup walnuts,chopped fine |
1/2 cup cherry preserves |
Directions:
1. Grease muffin cups. 2. Dissolve baking soda in buttermilk. 3. Add oats,stir. 4. Allow oats to soak into the buttermilk for about 30 minutes. 5. Put apple into pan with the Brandy. 6. Cook till tender,cool slightly. 7. Add brown sugar,egg,flour,salt,baking powder,cinnamon and nutmeg to oat mixture. 8. Add butter,raisins,walnuts and apple mixture. 9. Mix well by hand. 10. Spoon batter into muffin pans. 11. Top with 1 teaspoon Cherry Preserves 12. Bake in a 400 degree oven for 25 to 30 minutes(or) until toothpick inserted in to middle comes out clean. 13. ~Serve with Creamy Homemade Butter and Honey~ 14. ~Warm from the oven,great to sink your teeth into..Enjoy~ |
