From 'Food for Health and Vitality' - Makes ten - Hot muffins make a delightful breakfast food and are a good way of introducing the beneficial oat fibre to the diet. Ingredients:
65 g flour (wholewheat) |
50 g oatmeal |
1 teaspoon baking powder |
1 apple (eating, grated) |
75 g dates, chopped |
25 g walnuts, chopped |
1/2 teaspoon mixed spice |
1 tablespoon sunflower oil |
1 egg (free-range, beaten) |
milk (slimmed to mix) |
Directions:
1. Preheat the oven to 375F/190C/gas mark 5. Sieve the flour and add the bran remaining in the sieve. Stir in the oatmeal and baking powder. Add the grated apple, dates, walnuts and spice and mix in well. Beat together the oil and egg and add to the bowl with just enough skimmed milk to mix to a dropping consistency - the mixure should fall from the spooon quite easily. Spoon into a prepared muffin pan or small patty cases and bake in the centre of the oven for 15-20 minutes until just firm and golden brown in colour. |
