Muesli cookies with dried fruit, oats, and coconut Ingredients:
3/4 cup rolled oats |
1/4 cup processed bran |
1 cup plain flour |
3/4 cup dessicated coconut |
3/4 cup caster sugar |
1/3 cup sunbeam sultanas |
1/3 cup sunbeam diced apricots |
125g unsalted butter |
2 tablespoons golden syrup |
1 teaspoon bicarbonate of soda |
2 tablespoon boiling water |
Directions:
1. Pre-heat oven to 160C. Line baking trays with greaseproof paper. 2. Place oats, bran, flour, coconut, sugar, Sunbeam Sultanas, Sunbeam Apricots in a large mixing bowl and stir well to combine. 3. Melt butter and golden syrup together in a small saucepan. Mix bicarbonate of soda with water then add to the butter mixture. Pour into the oat mixture and mix well. 4. Place teaspoons of mixture onto prepared trays and bake for 10 minutes or until golden. 5. Makes 40 |
