3 lbs chicken, cut into pieces |
2 tablespoons olive oil |
1 garlic clove |
1 onion, chopped |
1 stalk celery, chopped |
1/2 bay leaf, 1/4 t sage |
1/4 cup sherry wine |
3 tomatoes, peeled sliced |
1 cup mushroom |
1 pinch allspice |
1 pinch sugar |
1/2 cup flour |
1 teaspoon salt |
1 teaspoon pepper |
Directions:
1. dredge chicken in flour shake off excess. 2. brown in oil 3. put in casserole. 4. saute onion celery and garlic. 5. pour over chicken add spices 6. add tomatoes add wine cover and bake 90 minutes at 400 degrees until chicken tender no time given 7. may need a little water. |
