Just perfection!! Makes your entire house smell good while it is baking Ingredients:
1 cup sugar |
1/2 cup crisco |
2 large eggs, beaten |
2 teaspoons baking soda |
1 cup buttermilk |
1 cup molasses |
2 teaspoons ground cinnamon |
1 1/2 teaspoons ground ginger |
1/4 teaspoon nutmeg |
1 teaspoon salt |
3 cups flour |
1 cup sugar |
4 tablespoons cornstarch |
1/2 teaspoon salt |
1 cup water |
1 teaspoon grated lemon zest |
6 tablespoons lemon juice |
2 tablespoons butter |
whipped topping (optional) |
Directions:
1. Preheat oven to 365°. 2. Cream the sugar and the Crisco, add the eggs. Dissolve the baking soda in buttermilk and add to this mixture. 3. Add the molasses, spices, salt and flour. 4. Grease and flour two loaf pans. 5. Bake in two 8x5-inch loaf pans for 20 minutes. 6. Serve with whipped cream/lemon topping. 7. To prepare LEMON TOPPING:. 8. Combine sugar, cornstarch and salt in a pan. Add the water and cook over low eat, for 5 minutes, until the mixture thickens and boils . 9. Remove from heat and add the lemon rind, juice and butter; stir till blended. 10. Cool slightly before serving. |
