This is recipe that was a favorite of my grandmother's best friend, Mrs. Osborn. This recipe was a favorite of the professional, young men that lived in the boarding house that Mrs. Osborn operated and a favorite of my family's. I usually have the meat ground together at the Butchers. Often I double the recipe as the uncooked meat loaf freezes well. Ingredients:
1/2 lb ground veal |
1/2 lb ground pork |
1/2 lb ground beef |
2 eggs |
1 cup onion, cut up small |
15 ounces whole tomatoes (pulp only) |
2 slices bread (squeezed in leftover tomatoe juice) |
1 teaspoon salt |
pepper |
1 tablespoon worcestershire sauce |
2 slices bacon |
Directions:
1. Mix but don’t beat. 2. Form into loaf. 3. Lay two strips of bacon on top of the loaf. 4. Bake at 375 for 1 1/2 hours. |
