Mrs. Michael's Frozen Strawberry Cake |

This cake uses frozen strawberries, it is not meant to be served frozen. Bless This Food: The Anita Bryant Family Cookbook. Ingredients:
1- 3 oz package strawberry flavored gelatin |
1/2 cup warm water |
1 package white cake mix |
4 eggs |
1 cup oil |
1/2 cup strawberry juice (from frozen strawberries in icing below) |
icing |
1/4 cup butter |
1 lb confectioner's sugar |
1- 10 oz package frozen strawberries, drained (juice reserved for cake). |
Directions:
1. Preheat oven to 350 degrees. 2. Lightly grease a 13x9x2 baking pan. 3. In a large bowl, dissolve gelatin in warm water. Add remaining ingredients for cake and beat on high speed of mixer for 3-4 minutes. Pour into prepared pan; bake 20-30 minutes. Cool. 4. Frosting: 5. In a small bowl mix butter and sugar. Blend in strawberries. Spread over cake. Cut into 3-inch squares. |
