Mrs. Little's Peanut Butter Cookies |

Another Air Force recipe from many years ago. These cookies are good with a sweet surprise of coconut in them (easily omitted if you don't like coconut). Ingredients:
1 cup butter |
1 cup peanut butter, smooth |
1 cup sugar |
1 cup brown sugar |
2 eggs |
1 teaspoon vanilla |
2 1/2 cups flour |
1 1/2 teaspoons baking soda |
1/2 teaspoon salt |
1 cup flaked coconut |
1 cup sugar (for rolling) |
Directions:
1. Cream the first six ingredients together thoroughly. 2. Sift the three dry ingredients together and add to creamed mixture. 3. Blend in the coconut, if desired. 4. Shape into 1 inch balls, roll in sugar. 5. Place 2 inches apart on an ungreased cookie sheet. 6. Flatten with a fork. 7. Bake at 375 degrees for 10 to 12 minutes. 8. Cool slightly, remove from pan. |
