This came from my fiance's mother. It was one of her signature recipes that was always at family gatherings. I am not a pie maker but had to try and make it for him at Thanksgiving this year. I really stressed over this but it was so easy to make and the look on his face when he tasted it was worth every bit of worry I had when making it. He said he almost cried. She used home made crust but I cheated and am so glad I went for the refrigerated crust as it was SUCH a big difference from the frozen crust. This is definitely a new tradition for our holidays. Ingredients:
1 refrigerated pie crust (baked and cooled) |
3/4 cup sugar |
3 tablespoons flour |
1/2 teaspoon salt |
2 cups milk |
2 1/2 tablespoons cocoa |
2 egg yolks (save whites for meringue) |
1 teaspoon vanilla |
2 1/2 tablespoons butter |
2 egg whites (yolks for pie filling) |
1/4 teaspoon cream of tartar |
6 tablespoons sugar |
Directions:
1. Combine sugar, flour, salt and cocoa with milk. 2. Cook over medium low heat until thickened. 3. Beat egg yolks and add extremely slow to cocoa mixture, Stirring quickly while adding so the yolks don't cook separately. 4. Continue to cook over low medium low heat to thicken a bit more. (About 15 to 20 minutes). 5. Remove from heat and add vanilla. 6. Drop in butter, but do so in dots or make sure butter is softened. 7. Stir well. 8. Pour into baked and cooled pie crust. 9. Whip egg whites with cream of tartar. Add sugar a little at a time and whip until stiff peaks form. 10. Spread on pie, making sure to seal the edges of the meringue to the pie crust. 11. Bake at 350 for about 15 minutes, until meringue is lightly browned. |
