These bonbon type cookie are one of my family's holiday favorites. The recipe came from a friend of my mom's. I guessed on the yield, but it makes a lot of cookies, so be prepared! Other flavors of extracts may be used. Ingredients:
1 1/8 cups butter |
1 cup granulated sugar |
4 eggs, beaten |
6 cups all-purpose flour |
6 teaspoons baking powder |
1 teaspoon baking soda |
1 cup orange juice |
1 teaspoon lemon extract |
2 cups confectioners' sugar |
milk or water, 1 small amount |
Directions:
1. Preheat oven to 400 degrees. 2. Cream together butter, sugar, eggs and extract. 3. Mix dry ingredients together in a seperate bowl. 4. Add dry ingredients and OJ to creamed mixture as follows:. 5. 1/3 of the dry, 1/3 OJ, 1/3 dry, 1/3 OJ, 1/3 dry, 1/3 OJ. Mixing well after each addition. 6. Drop by 1/2 teaspoonful in high mounds on greased cookie sheet about 1.5 inches apart. 7. Bake at 400 degrees for 8 - 10 minutes. Remove to cooling rack. 8. When cool, mix together confectioners sugar and small amount of milk or water to make a slightly loose glaze. Dip just the tops of the cookies into the glaze and set on waxed paper to set up. If desired, sprinkle colored sugars on glaze while still wet. |
