I love date nut bread spread with cream cheese or by itself. I'm posting this for safe keeping because I really want to try it soon. It sounds yummy! Ingredients:
2 cups dates, pitted and chopped |
2/3 cup firmly packed brown sugar |
1/2 cup honey |
2 tablespoons butter or 2 tablespoons margarine |
1 cup very hot water |
1 egg, beaten |
2 teaspoons vanilla extract |
2 cups all-purpose flour |
1 teaspoon baking soda |
1/2 teaspoon salt |
1 cup chopped walnuts |
Directions:
1. In a large bowl, combine dates, sugar, honey, and butter; add hot water, stir and let stand for 15 minutes. 2. Preheat oven to 325 degrees. 3. Stir egg and vanilla into date mixture. 4. In a separate bowl, combine remaining ingredients. 5. Stir the flour mixture into the date mixture. 6. Pour batter into a greased 9x5 inch loaf pan. 7. Bake for 1 hour or until a toothpick inserted in the center comes out clean. 8. Cool in the pan for 10 minutes, then remove and let cool completely on a wire rack. |
