Mozzarella With Mediterranean Salsa |

Slices of tomato & mozzarella finished with salsa. Ingredients:
9 ounces mozzarella cheese, finely sliced |
1 beefsteak tomato, finely sliced |
1 zucchini, finely diced |
1 small eggplant, finely diced |
1 ounce black olives, pitted, finely diced |
3 tablespoons italian salad dressing |
1 tablespoon pesto sauce |
black pepper |
Directions:
1. Arrange the mozzarella and tomato slices onto individual serving plates. 2. Blanch and refresh the zucchini and eggplant, then combine with the black olives. 3. Pile spoonfuls into the centre of each plate, mix together the dressing and pesto then drizzle over the salad. Season with plenty of black pepper. 4. Serve immediately. |
