Mozzarella Stuffed Turkey Meatballs and Spaghetti |

I found this on Obesity Help. I haven't tried this, just posting for safe keeping. Ingredients:
1 slice white bread |
1/4 cup milk |
1 1/4 lbs ground turkey |
1/2 cup finely diced onion |
2 garlic cloves, minced |
1 tablespoon ketchup |
1 egg |
3/4 teaspoon salt |
1/2 teaspoon ground black pepper |
1/2 teaspoon dried basil |
1/4 teaspoon dried oregano |
2 tablespoons chopped fresh parsley |
24 1/2 inches cubed mozzarella cheese |
18 ounces marinara sauce, warmed (1 jar) |
1/3-1/2 lb spaghetti, cooked to al dente |
Directions:
1. Preheat oven to 375 degrees. Line a baking sheet with parchment paper or a silpat and set aside. 2. Tear slice of white bread into small pieces and place into a large bowl. Pour milk over top of the bread and let it soak while you chop the onions and garlic. Add the remaining ingredients {excluding the cheese} into the bowl and mix thoroughly until all ingredients are evenly combined. Scoop the meat mixture by the tablespoon into your hand and place a cube of cheese in the middle. Press the meat all around the cheese to cover completely and roll into a ball. Place on prepared baking sheet and continue stuffing the meatballs with cheese until you have 24. 3. Bake for 20-23 minutes or until meat is thoroughly cooked. Serve with marinara and spaghetti. |
