Mozzarella, Spinach, and Tomato Omelet |

CLX Program Ingredients:
3 egg whites |
1 tablespoon water |
1 cup fresh spinach leaves |
1 cup plum tomato, diced |
1/4 cup part-skim mozzarella cheese, shredded |
1/2 of a whole wheat light english muffin, toasted |
nonstick cooking spray |
Directions:
1. Heat a nonstick skillet coated with nonstick cooking spray over medium heat. 2. Whisk egg whites with water. Add the whisked eggs and allow to cook for 2 to 3 minutes. Then add spinach, tomatoes, and cheese and fold over into an omelet. 3. Allow to cook for 2 to 3 additional minutes. 4. Serve with toasted english muffin half. |
