A summer favorite Ingredients:
1 cup mozzarella cheese, small cubed |
1 1/2 cups tomatoes, cubed |
1 1/2 cups cucumbers, sliced &,cubed |
1 can chickpeas, rinsed |
1 cup olive, chopped |
italian dressing, to taste |
basil, chopped |
1 can black beans, rinsed |
Directions:
1. Mix all ingredients and toss well. 2. Refrigerate until serving. 3. Can of black beans is optional and will extend the salad. |
