Mousse Au Chocolat

Absolutely delicious chocolate mousse, recipe from France.
Ingredients:
200 g dark chocolate
60 g unsalted butter
5 egg whites
1 tbsp coffee, extract (optional)
Directions:
1. Beat eggs vigorously in copper or stainless steal bowl with LARGE whisk until completely foamy. Eggs should stick to whisk without dripping off when lifted from bowl
2. Place chocolate and coffee extract in large-medium sauce pan on low-medium heat. As it melts, chop butter into small rectangles and mix in slowly, square-by-square, as chocolate melts. Wait until each rectangle melts completely before adding the next one
3. Slowly add egg whites into chocolate by pouring in a bit at a time, and using to large rubber spatula to FOLD the eggs and the chocolate together. DO NOT STIR. Continue to FOLD the mixture until all eggs and chocolate are COMPLETELY blended. This might take a while, be patient
4. Pour into individual serving bowls. Place in freezer for 2 hours to chill before serving
