While searching for apple butter, I ran into sweet Mountainmama's Apple Butter Muffins which I bookmarked. Mountainmama was a sensitive and sweet soul, and she lived in Heaven West Virginia. Read more . A few months later, her Aunt emailed me stating that Karen had died. I know she is in God's heaven now. i miss her. Ingredients:
preheat oven at 375* f |
1 cup all purpuse flour |
1/2 cup whole wheat pastry flour |
1/4 cup oatmeal |
1/3 cup brown sugar |
1 tablespoon pumpkin pie spice (jo.jo-ba's) |
2 teaspoons cinnamon |
1/4 t. salt |
combine the dry ingredients in a medium bowl. |
in a small bowl, mix together : 1/4 cup eggbeaters type product |
3/4 cup soy milk |
3 tablespoons olive oil |
add to dry ingred. and mix just until moistened. spoon into a greased 9 inch cake pan. or 12 count muffin tin. top batter with 1/2 cup homemade apple butter, and sprinkle2 tablespoons chopped nuts or about 2 tablespoons coconut on top of apple butter. bake at 375 degrees farhenheit about 30 mins. or until toothpick comes out clean. elevate pan to cool, and enjoy |
